Pectin has good emulsification, thickening, stabilization and gelling effects, and has been widely used in food, textile, printing and dyeing, tobacco, metallurgy and other fields. Pectin is divided into two types: water-soluble and water-insoluble. Water-insoluble pectin is soluble in sodium hexametaphosphate solution or inorganic acid solution. Protopectin in natural pectin is insoluble in water, but can be hydrolyzed into water-soluble pectin under the action of chemical reagents such as acids, alkalis, and salts. At present, the main extraction methods commonly used at home and abroad include the following: acid extraction method and ion exchange resin method.
